Recipe for chicken from Antilles.

Today something for gourmets J. I recommend a delicious dish that I did myself recently. Moreover, it is easy to prepare and takes only 30 minutes.

Number of servings: 4

Prepare:
Desiccated coconut: 45 g
Single chicken breast: 4 pcs.
Coconut milk: 400 ml
Curcuma: 1 pinch
Peeled and diced tomatoes: 2 pcs.
Onions: 2 pcs.
Thyme: 3 sprigs
Water: 75 ml
Salt: to taste
pepper: to taste
Diced pineapple: 0.5 pc.
Coriander: 3 spoonfuls
Canola oil: 2 spoonfuls
Basmati rice: 200 g

Wok or deep frying pan or casserole pan with a thick bottom.

Preparation:

Wash the chicken, dry it and cut into 3 pieces. Flavour with salt and pepper on both sides.
In the pan (wok) warm up 2 spoonfuls of canola oil.
Throw the chicken in hot oil. Roll over and wait until the chicken is golden brown.
Cut the onion and add it to the chicken. Fry for 3 minutes. Add the desiccated coconut and fry for about 1 minute, stirring constantly.
Peel tomatoes and dice it, same as pineapple.
Add the coconut milk, 75 ml of water, a pinch of curcuma, tomatoes, pineapple and 3 sprigs of thyme. The dish should be cooked approx. 20 minutes, covered. Cover with a lid.
If the sauce will be too thin, boil it until it thickens. At the end flavour all with the salt and pepper.
Add 3 spoonfuls of chopped cilantro.

Bon appetit!
