Chicken in sweet and sour sauce

I adore pizza, but I have to admit that I have an appetite for chicken in sweet and sour sauce for some time. Of course, it should be prepared with rice noodle, which guests in my kitchen very often. This is one of my favourite dishes, so I’ll share the recipe for this delicious dinner with pleasure. :)

 Ingredients:


350 g of chicken
1 full tablespoon of potato flour
1cm piece of fresh ginger
1 clove of  garlic
1 small onion
1/4 cup of rice vinegar (or lemon juice)
4 tablespoons of sugar cane (you can substitute by white sugar)
freshly ground pepper
1 green or red pepper, cut into 1.5 cm cubes
a pinch of chili flakes -  amount to taste
2 tablespoons of soy sauce
1 tablespoon of vegetable oil


Preparation:

Clean the chicken breasts from a membrane and veins. Cut into 1.5cm cubes. Season with salt and mix it with potato flour. Peel the ginger and garlic and cut it into thin slices. Chop the onion.
Pour a cup of rice vinegar, add 3 tablespoons of water and sugar, mix all and set aside. Cook the rice or pasta according to packet instructions, then drain in a sieve, pour water. ( I use rice noodle, yummy!)
In a large frying pan, heat the oil, add ginger, garlic and spring onions, fry for a minute, put the chicken and fry again over medium heat for about 5 minutes and mix all from time to time. At the end of cooking add the pepper, chilli and half of teaspoon of freshly ground black pepper.
Pour the vinegar with water and sugar, stir and bring to a boil. Cook for about 3 minutes until the vinegar will be soft and the sauce starts to caramelise. Add the soy sauce and stir.

Push the ingredients to the pan aside, in the free space put the rice or pasta. Fry the rice or pasta for a minute to heat up and stir it.. At the end stir everything in the frying pan and sprinkle with chopped chives and peanuts.
